The juice is then fermented using yeast that consumes the natural sugars of the apples, converting them into alcohol (ethanol). In the second fermentation process, bacteria are added to the alcohol, which turns it into acetic acid. This gives apple cider vinegar its flavor and acidity. Because of this, a substance called “mother” forms in this process, which is made of bacteria, enzymes, and proteins. This is also the reason why unfiltered apple cider vinegar has a cloudy appearance.

It’s well-established that fermentation can reduce FODMAP content in foods. What Are the Side Effects of Apple Cider Vinegar?

Apple cider vinegar is reported to cause side effects like digestive issues, nausea, and diarrhea, especially when taken in large amounts or on an empty stomach.The skin can burn from using ACV, as well as cause throat irritation, tooth erosion, and interact with certain medications. To avoid these risks, it’s recommended to dilute ACV before using or drinking it as well as consulting with your doctor, dietitian, or nutritionist to make sure it’s right for you.
